Wood plank grilled and smoked salmon and steelhead

Grilling with wood planks, or plank cooking, can be done in three easy steps. Begin with an Alder or Cedar Wood Grilling Plank by Smokehouse Products. 3 EASY STEPS:

  1. Soak the wood grilling plank in water for 45-60 minutes.
  2. Bring the wood plank to cooking temperature by heating it on your barbecue grill at low heat for 5 minutes. Brush a light coating of olive or vegetable oil on the top surface only of the plank. Place your seasoned food on the plank to start cooking.
  3. Use the lowest setting on a gas grill or low charcoal heat. Place the plank directly over the heat source. Cook with the lid closed so that the smoke will surround and infuse the food. When the wood grilling plank begins to smoke, after 15-20 minutes, check for any flames on the plank. Use a spray bottle filled with water to extinguish any flames on the plank. Check with a meat thermometer to test your food to see if it is done, especially poultry. Discard the plank in a safe place after use.
