It is important to use a good, stiff fillet knife to fillet your salmon when preparing to make smoked salmon. For a knife similar to the one in this video, try the Victorinox 40133 breaking knife. This knife is similar to the Forschner knife that is used in this video, since this model is no longer made. The blade on the knife is about 12" long for when you're smoking salmon that weigh 20 lbs or more. Once you have filleted your salmon, you'll want to try one of the old original salmon brines. Check out this video of Herb Good showing how simple it is to make excellent smoked salmon with a basic wet brine or dry brine. You'll be amazed at how easy this recipe is and how inexpensive the ingredients are to make it. Of course, it's always important to use your favorite Big Chief or Little Chief smoker to make sure you're smoking your salmon with consistent temperature and at low temps.
