EASY CARROT CAKE WITH SMOKED NUTS
1 1/4 cups Bob's Red Mill Gluten Free 1 to 1 Baking Flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/16 teaspoon ground cloves
1/8 teaspoon all spice
1/4 teaspoon salt
1 cup coconut sugar
1/2 teaspoon vanilla extract
1/3 cup vegetable oil
1/4 cup melted butter
1 1/2 cups shredded carrots
Preheat oven to 350 degrees.
Shred carrots and set aside.
In a large mixing bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, ground cloves, all spice and salt. Stir until combined. Set aside.
In a different mixing bowl, mix together sugar, eggs, vanilla, oil and melted butter. Stir until combined.
Pour dry ingredients into bowl with wet ingredients and mix until well blended.
Gently fold in carrot shreds, you may also add in Smoked Nuts at this point to the batter if you would like.
Pour batter into a greased 8 X 8 glass baking dish.
Bake from 20 - 30 minutes, testing to see if it's done by inserting a toothpick in the center and checking to see if it comes out clean.
Once cake has fully baked. Let cool.
Top with your frosting of choice. (Cream cheese frosting goes great with carrot cake:)
And finally sprinkle some Smoked Nuts on top of the frosting for a subtle smokey flavor to your carrot cake!
