Smoked Apple Bake

Up to 1 dozen small (any type of) apple or 8 large baking apples such as Granny Smith. Enough to fill a large round casserole dish about 8 or 9 inches in diameter.

Proceed to wash, quarter and core apples (do not peel) and place on smoke racks or screens peel side down. Use well-soaked chips of choice (Hickory imparts a quite unique flavor) and then into pre-heated and smoking Little Chief or Big Chief smoker. Smoke 1 pan's worth (about 2 hours total) and then place smoked apples in casserole dish. Sprinkle over apples:

1 1/2 teaspoon of cinnamon

Syrup recipe:

2 cups water
1 cup white sugar
2 tablespoons butter

Combine all ingredients in sauce pan place on medium heat and stir to dissolve sugar. Bring mixture to boil and let boil for 5 minutes. Pour syrup over smoked apple and cinnamon mixture. Cover with aluminum foil or casserole lid. Bake @ 375* for 1 hour until apples are tender.

Optional ingredients:

1/2 cup chopped nuts or raisins

Serve warm.
