Brine: Debbie's Dad's Famous Jerky & Salmon Brine Mix
Debbie’s Dad’s Famous Jerky & Salmon Brine Mix
10 lbs White Sugar
4 lbs Brown Sugar
¾ Cups Non-Iodized Salt
You may also add any of the following ingredients to suit your taste, although none of these would be required:
Garlic Powder, Onion Powder, Cracked Pepper, etc.
Mix all ingredients together in a non-aluminum container.
Spread a thin layer of the mixture in a glass or plastic pan.
Lay a flat layer of meat out. Then spread another layer of mixture over the meat
And so on until meat is covered on both sides.
Cover container with plastic wrap or tight-fitting lid.
Put container into refrigerator for 3 days.
After 3 days in the fridge, remove and rinse all meat off under cold water. Place on racks and smoke in your Smokehouse smoker until desired dryness and smokiness reached.
